
Creamy Scrambled Eggs — Low Heat, Butter, No Milk

Scrambled eggs are the first thing you learn to cook, and the thing most often done wrong: hot pan, quick stir, and it turns dry and crumbly like at a hotel breakfast. Creamy scrambled eggs are the opposite — low heat, patience, butter, and off the heat in time. It takes five minutes instead of two, and it is a different dish.
Ingredients

- 25 g Butter
- ½ tsp Salt
- Pepper
- 1 tbsp Chives (chopped)
- 4 slices Bread (toasted)

Beat the eggs
Beat the eggs with salt and pepper with a fork until no streaks of white remain. No milk, no cream, no water.

Start cold
Butter into a non-stick pan, eggs in, only then turn the hob to low to medium heat. The slow start stops the eggs setting on the base at once.

Stir slowly
Stir slowly and constantly with a rubber spatula, across the whole base and edges. 3 to 4 minutes. Nothing happens for a long time, then it thickens. Do not turn up the heat.

Stop in time
As soon as the eggs are thick, glossy and in soft curds but still look slightly runny — pan off the heat. It finishes in 30 seconds. On the plate it should be creamy, not firm.

Serve
Chives over, onto buttered toast. Eat at once — scrambled eggs wait for no one.
Tips
- A spoonful of crème fraîche or cream cheese stirred in at the very end makes it even creamier and stops the carry-over cooking — the restaurant trick. Milk beforehand does the opposite.
- Additions: crispy bacon, smoked salmon in strips, fried mushrooms, cherry tomatoes, feta, spinach. Everything pre-cooked and folded in at the end — the eggs themselves cook nothing.
- For children a minute longer until set — most prefer it that way. With cheese stirred in it is a whole supper with bread and carrot sticks.
What can I substitute?
Works, but the butter is the flavour. With oil it goes Mediterranean — then add tomatoes and basil.
Dill with salmon, spring onions with bacon. All fresh and only at the end.
The vegan scramble. Kala namak (black salt, from Asian shops) gives the eggy taste. Fry in oil 5 minutes.

Why do my scrambled eggs turn dry and crumbly?
Too hot and too long. Eggs set from 65 °C; in a hot pan that happens in seconds and the water is squeezed out. Low heat, constant stirring and off the heat while it still glistens — then the water stays in the egg and it is creamy.
Does milk belong in scrambled eggs?
No. Milk dilutes, makes it watery and lets it dry faster because the proteins set harder. Scrambled eggs get creamy through fat and low temperature — butter while cooking, crème fraîche at the end.
How many eggs per person for scrambled eggs?
Two to three for breakfast, three as supper with bread and salad. Two for children. So 10 to 12 eggs for four people — in a large pan, which then takes 6 minutes instead of 4.
Can you reheat scrambled eggs?
No — it turns firm and rubbery. Scrambled eggs are the one dish you eat fresh and at once. It takes 5 minutes, which is faster than any reheating.
