Oven-Roasted Chicken Thighs — Crispy Skin, Juicy, No Turning

Pat the thighs dry, rub with oil, salt, paprika, garlic and lemon zest, skin side up on a tray, 45 minutes at 200 °C. Do not turn, do not cover, do not baste. Potatoes and vegetables under the thighs — they cook in the juices.

Chicken thighs are the cheapest, juiciest and easiest part of the bird — and in the oven almost nothing can go wrong, because the fat under the skin protects the meat. They forgive 15 minutes too many where a breast is dry after 3. Onto a tray, into the oven, 45 minutes of doing nothing. With potatoes and vegetables underneath it is a whole meal from one tray.

Ingredients

  • 8 pieces Chicken thighs (skin-on, bone-in, thighs or drumsticks)
  • 3 tbsp Olive oil
  • 2 tsp Paprika
  • 1 tsp Thyme (dried)
  • 4 pieces Garlic cloves
  • 1 piece Lemon
  • 1½ tsp Salt
  • Pepper
  • 800 g Potatoes (in wedges)
  • 3 pieces Carrots
  • 2 pieces Onions (red, in wedges)

Method

    Season the thighs

    Preheat the oven to 200 °C fan. Pat the thighs thoroughly dry with kitchen paper — wet skin will not crisp. Rub with 2 tbsp oil, paprika, thyme, crushed garlic, grated lemon zest, 1 tsp salt and pepper, under the skin too.

    Vegetables

    Toss the potatoes, thick carrot pieces and onions with the remaining oil and salt and spread on a tray. Halve the lemon and add it.

    Add the thighs

    Lay the thighs skin side up on the vegetables, spaced apart. The fat drips onto the vegetables as they roast — that is the point.

    Roast

    Roast 45 minutes in the middle of the oven, without turning or covering. The skin is golden and crisp, the meat pulls from the bone, the juices run clear. Core temperature 75 °C.

    Serve

    Rest 5 minutes. Squeeze the roasted lemon over everything. Serve straight from the tray.

Tips

  • Seasoned overnight and left uncovered in the fridge, the skin crisps even more — the salt dries it. Rub in the evening, into the oven the next day.
  • Marinades to rotate: honey mustard (2 tbsp honey, 1 tbsp mustard, soy sauce), harissa yoghurt, curry coconut, or simply salt, pepper, lemon. Always brush on only for the last 15 minutes if there is sugar in it — otherwise it burns.
  • Cold thighs the next day are the best picnic food. Pulled off the bone, the meat becomes a sandwich, salad or chicken curry.

What can I substitute?

Chicken thighs
Instead use: 8 chicken wings plus 4 drumsticks, or a whole chicken in pieces

Wings are done after 35 minutes. A jointed chicken cooks in 45 — add the breast pieces for the last 25.

Potatoes
Instead use: 800 g sweet potato, pumpkin or fennel

All need about 40 minutes and go in with the thighs. Pumpkin in autumn, fennel in summer.

Paprika
Instead use: 2 tsp curry powder or 1 tbsp ras el hanout

Curry rubbed in with coconut yoghurt is the children's version. Ras el hanout with lemon and olives the Moroccan one.

Why does the skin on my chicken thighs not crisp?

It was wet, the oven too cool, or the tray covered. Pat the skin thoroughly dry, 200 °C fan, roast uncovered and do not baste — any liquid on the skin softens it. For extra crisp, switch on the grill for the last 5 minutes.

How long do chicken thighs need in the oven?

Bone-in thighs 45 minutes at 200 °C, drumsticks 40, boneless 30. The safe measure is the core temperature: 75 °C at the bone, or clear juices when pierced. Thighs can take 10 minutes more — they stay juicy.

Why are chicken thighs juicier than breast?

More fat and more connective tissue. Both melt as they roast and keep the meat moist — breast has almost no fat and dries at once above 75 °C. That is why thighs are the better cut for the oven and barbecue, and half the price.

How much does oven chicken thigh cost per person?
