
Lasagne al Forno — with Bolognese and Béchamel That Holds Its Shape
Four layers: béchamel on the base, lasagne sheets, bolognese, béchamel, cheese — repeat three times, finish with béchamel and Parmesan on top. Bake at 180 °C for 40 minutes, then rest 15 minutes. Both sauces must be thick and the lasagne must rest, or it collapses when cut.
Lasagne is the dish you make for guests because it can be ready the day before and needs no attention in the oven. What often ruins it is the texture: sauces too thin and it swims; cut too soon and it collapses. Both are easy to avoid. With yesterday's bolognese, the lasagne is layered in 30 minutes.
Ingredients
- 12 pieces Lasagne sheets (no-boil)
Bolognese
- 500 g Minced beef
- 1 piece Onion
- 1 piece Carrot
- 2 pieces Garlic cloves
- 2 tbsp Olive oil
- 2 tbsp Tomato purée
- 2 tins Tomatoes (chopped, 400 g each)
- 1 tsp Oregano
- 1½ tsp Salt
- Pepper
Béchamel
- 60 g Butter
- 60 g Flour
- 8 dl Milk
- Nutmeg
- 200 g Mozzarella (grated)
- 80 g Parmesan (grated)
Method

Bolognese
Finely chop the onion, carrot and garlic. Brown the mince in the oil, add the vegetables and cook 5 minutes, fry the tomato purée 1 minute. Add the tomatoes, oregano, salt and pepper, simmer uncovered 30 minutes until thick. It must not be runny.

Béchamel
Melt the butter, stir in the flour, cook 1 minute. Add the milk gradually while stirring, bring to the boil and simmer 5 minutes until thick and coating a spoon. Season with salt, pepper and nutmeg.

Layer
Preheat the oven to 180 °C. Cover the base of a baking dish (about 25 × 35 cm) with a thin layer of béchamel. Then: lasagne sheets, a third of the bolognese, a quarter of the béchamel, a third of the mozzarella. Repeat three times.

Finish
Top layer: lasagne sheets, remaining béchamel so everything is covered, Parmesan over. No sheet may poke out dry — it turns hard.

Bake and rest
Bake 40 minutes in the middle of the oven until golden on top and bubbling at the edges. Take out and stand 15 minutes — then it cuts into clean squares.
Tips
- With bolognese from the freezer, the lasagne is layered in 20 minutes. Which is why cooking bolognese double always pays off.
- Unbaked, the lasagne keeps a day in the fridge — the sheets soak in the sauces and turn even more tender. Then bake 10 minutes longer.
- Freeze leftovers in single portions. From frozen, reheat at 180 °C for 30 minutes — a weeknight supper with no work.
What can I substitute?
Come out more tender and need no preparation. Bake 5 minutes less.
The Italian-American version — faster and slightly tangy. The lasagne comes out a little firmer.
Stronger and very Swiss. Gruyère crisps more on top, raclette is creamier.

Frequently asked questions
Why does my lasagne collapse when cut?
Two reasons: the sauces were too thin, or it went straight from oven to plate. Bolognese and béchamel must be thick enough to stand on a spoon. And rest 15 minutes after baking — then the layers settle and the squares hold.
Do lasagne sheets need pre-cooking?
The usual sheets from Barilla, Migros or Coop do not — they cook in the sauce. For that they must be completely covered by sauce, and the sauces must not be too dry. The pack says 'no pre-cooking'.
How many layers does a lasagne have?
Three to four layers of pasta is ideal — more, and it gets too tall and cooks unevenly; fewer, and it is more sauce than lasagne. Every layer needs bolognese and béchamel; bolognese alone dries out.
Can I prepare lasagne ahead?
Yes, it is the ideal dish for guests. Layer the day before and store raw in the fridge, bake on the day. Or bake fully and reheat — it tastes at least as good on day two.
