Hot Honey Beef Bowl with Sweet Potato

Sweet potato cubes roast in the oven while the mince browns in a pan. Both go into a bowl with avocado and cottage cheese, finished with spicy honey. Ready in 35 minutes, with 42 g of protein per serving.

This bowl pulls off something that rarely works so well: it is filling and light at once. The hot honey is what holds it together — sweet, sharp and a little sticky over the spiced mince. Cottage cheese sounds odd at first, but here it does the job a yoghurt dressing usually would: cool, creamy, and a protein boost besides.

Ingredients

  • 500 g Minced beef (lean beef)
  • 1 piece Sweet potato (large, diced)
  • 1 piece Avocado
  • 120 g Cottage cheese
  • 3 tbsp Hot honey (or honey with chilli flakes)
  • 1 tbsp Olive oil
  • 1 tsp Garlic powder
  • 1 tsp Paprika powder
  • 1 tsp Salt
  • Pepper
  • ½ bunch Parsley

Method

    Roast the sweet potato

    Heat the oven to 220 °C. Cut the sweet potato into 2 cm cubes, toss with the olive oil, paprika, salt and pepper, and roast for 20 to 25 minutes, until the edges are golden.

    Brown the mince

    Heat a pan until very hot and fry the mince without extra oil for 6 to 8 minutes. Leave it alone for the first few minutes so it browns rather than steams.

    Season

    Add the garlic powder, salt and pepper and mix through. Season the meat generously — the cottage cheese balances it out later.

    Build the bowl

    Divide the mince and sweet potato between four bowls. Slice the avocado and add it, then spoon the cottage cheese alongside.

    Finish with honey

    Drizzle the hot honey generously over the whole bowl and scatter over the chopped parsley. Serve straight away, while the sweet potato is still warm.

Tips

  • Ready-made hot honey is hard to find in Switzerland. Warm 3 tbsp of honey with a good pinch of chilli flakes in a pan — leave it to infuse for 2 minutes and it is done.
  • Slice the avocado only just before serving or it browns. A squeeze of lemon helps if you need to prepare ahead.
  • The mince and sweet potato keep three days in the fridge — ideal for lunch at work. Add the avocado, cottage cheese and honey fresh.

What can I substitute?

Cottage cheese
Instead use: 120 g Greek yoghurt or feta

Yoghurt is creamier, feta saltier. Both do the same job: something cool against the hot honey.

Sweet potato
Instead use: 1 large waxy potato or 400 g pumpkin

Both roast similarly. Pumpkin needs 5 minutes less; ordinary potatoes take about the same time.

Minced beef
Instead use: 500 g minced chicken or soy mince

Minced chicken is milder; soy mince makes the bowl vegetarian. Brown either just as hard.

Hot honey
Instead use: 2 tbsp maple syrup with 1 tsp sriracha

Same idea, different sweetness. Sriracha brings a little acidity along with the heat.

What is hot honey and where do I get it?

Hot honey is honey infused with chilli. It is rarely on Swiss shelves, so the simplest route is to make it: warm 3 tbsp of honey with a pinch of chilli flakes and leave it to infuse for 2 minutes. It keeps for weeks in a jar.

Does cottage cheese really go with minced beef?

Yes, for the same reason soured cream works with chilli: something cool and slightly tangy cuts through rich, spiced meat. If you are sceptical, start with a small spoonful — most people add more the second time.

How much protein does the bowl have?

Around 42 g per serving. Most of that comes from the mince, with the cottage cheese contributing about 8 g. That makes it a solid meal after training.

Can I prepare the bowl in advance?
